Description

Rich chocolate brownies with creamy peanut butter, Greek yogurt, and protein powder. These brownies are soft, fudgy, and simple to prepare.

Ingredients

  • 1/2 cup creamy peanut butter (120 g), plus 2 tablespoons for swirling
  • 1/2 cup plain Greek yogurt (120 g)
  • 2 large eggs
  • 1/3 cup pure maple syrup (105 g)
  • 1/2 cup unsweetened cocoa powder (43 g)
  • 1/2 cup oat flour (50 g)
  • 1 scoop chocolate protein powder, approximately 30 g
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup chocolate chips (optional)

Instructions

  • Preheat the oven to 350°F. Line an 8-inch square baking pan with parchment paper.
  • In a mixing bowl, whisk together the peanut butter, Greek yogurt, eggs, and maple syrup until smooth.
  • Add the cocoa powder, oat flour, protein powder, baking powder, and salt. Stir just until combined.
  • If the batter is unusually thick, add 1 tablespoon of milk at a time until it becomes thick and spreadable.
  • Fold in the chocolate chips, if using.
  • Spread the batter evenly into the prepared pan.
  • Warm the additional 2 tablespoons of peanut butter slightly if needed. Drizzle it over the batter and gently swirl with a knife.
  • Bake for 18–23 minutes, or until the edges are set and the center remains slightly soft.
  • Cool completely before slicing. For a firmer texture, refrigerate for about 30 minutes before serving.

Notes

Protein powders vary in how much liquid they absorb, so the batter may need a small adjustment depending on the brand. Start with no additional liquid and add milk only if the batter is unusually stiff.

Store brownies in an airtight container in the refrigerator for up to 5 days. For longer storage, freeze individually wrapped brownies for up to 2 months.

Nutrition information will vary depending on the brands, substitutions, and serving size used.
