Description

These No-Bake Protein Cheesecake Bites are creamy, lightly sweet, and easy to make without an oven. With Greek yogurt, cream cheese, and protein powder, they make a simple high-protein snack or sweet treat for any time of day.

Ingredients

  • 8 oz (225 g) cream cheese, softened
  • 1 cup plain Greek yogurt
  • 1/3 cup vanilla protein powder
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1/2 cup graham cracker crumbs
  • 2 tablespoons melted coconut oil
  • Fresh berries, for topping, optional

Instructions

  • Prepare the base: Mix the graham cracker crumbs with melted coconut oil until the mixture looks like wet sand.
  • Make the filling: In a bowl, beat the softened cream cheese until smooth. Add Greek yogurt, protein powder, honey or maple syrup, vanilla, and lemon juice. Mix until creamy and well combined.
  • Fill the molds: Divide the graham cracker mixture between 12 small silicone muffin cups or mini liners. Press down gently.
  • Add the filling: Spoon the cheesecake mixture evenly over each base.
  • Chill: Refrigerate for at least 2 hours, or until the bites are firm.
  • Add toppings: Top with fresh berries before serving if desired.
  • Serve: Remove from the molds and enjoy chilled.

Notes

Storage

Store the cheesecake bites in an airtight container in the refrigerator for up to 4 days. You can also freeze them for up to 1 month. Thaw them in the refrigerator before serving.

Recipe Tips

  • Use full-fat or thick Greek yogurt for a creamier texture.
  • Make sure the cream cheese is softened before mixing.
  • Add a little more honey if you prefer a sweeter cheesecake bite.
  • Fresh strawberries, blueberries, or raspberries make an easy topping.
  • For a chocolate version, add 1 tablespoon of unsweetened cocoa powder to the filling.
