Description

These Lemon Coconut Protein Balls are soft, chewy, and full of fresh lemon and coconut flavor. They’re easy to make with simple ingredients and no oven, making them a handy high-protein snack for busy days.

Ingredients

  • 1 cup rolled oats
  • 1/2 cup vanilla protein powder
  • 1/2 cup unsweetened shredded coconut
  • 1/3 cup creamy almond butter or peanut butter
  • 1/4 cup honey or maple syrup
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon vanilla extract
  • 1–2 tablespoons milk, as needed
  • 1/4 teaspoon salt

Instructions

  • Mix the dry ingredients: Add the oats, protein powder, shredded coconut, and salt to a large bowl.
  • Add the wet ingredients: Stir in the almond butter, honey or maple syrup, lemon juice, lemon zest, and vanilla.
  • Mix well: Stir until the mixture comes together into a soft, sticky dough.
  • Adjust the texture: Add milk 1 tablespoon at a time if the mixture feels too dry.
  • Shape the balls: Scoop out about 1 tablespoon of the mixture and roll it between your hands to form a ball.
  • Coat with coconut: Roll each ball in a little extra shredded coconut if desired.
  • Chill: Place the balls on a plate and refrigerate for about 20 minutes.
  • Serve: Enjoy chilled or let them sit at room temperature for a few minutes before eating.

Notes

Storage

Store the protein balls in an airtight container in the refrigerator for up to 1 week. They can also be frozen for up to 3 months.

Recipe Tips

  • Use fresh lemon zest for the strongest lemon flavor.
  • Add the milk slowly so the mixture does not become too wet.
  • For extra lemon flavor, add another 1/2 teaspoon of zest.
  • Roll the finished balls in coconut for a pretty, simple coating.
  • Use almond butter for a mild flavor or peanut butter for a richer taste.
  • Add white chocolate chips for a sweeter treat.
