Description

This High-Protein Sheet Pan Dinner combines seasoned chicken, potatoes, broccoli, and bell peppers on one pan for an easy and filling meal. Everything roasts together, making this a simple choice for busy weeknights and easy cleanup.

Ingredients

  • 1 lb (450 g) boneless, skinless chicken breast, cut into bite-size pieces
  • 1 lb (450 g) baby potatoes, halved
  • 2 cups broccoli florets
  • 1 large bell pepper, chopped
  • 1/2 red onion, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese, optional
  • Fresh parsley, optional

Instructions

  • Preheat the oven: Heat the oven to 425°F (220°C). Line a large sheet pan with parchment paper.
  • Season the potatoes: Add the potatoes to the pan and toss with 1 tablespoon olive oil, paprika, garlic powder, salt, and pepper.
  • Roast the potatoes: Spread them into a single layer and roast for 15 minutes.
  • Season the chicken and vegetables: Add the chicken, broccoli, bell pepper, and red onion to the pan. Drizzle with the remaining olive oil and sprinkle with Italian seasoning and onion powder.
  • Toss and roast: Mix everything together and spread it evenly across the pan. Return to the oven and roast for another 12–15 minutes, or until the chicken is cooked through and the potatoes are tender.
  • Add Parmesan: Sprinkle Parmesan over the top during the last 2 minutes of cooking if desired.
  • Serve: Let everything cool for a few minutes, then serve warm with fresh parsley.

Notes

Storage

Store leftovers in airtight containers in the refrigerator for up to 4 days. Reheat in the oven, air fryer, or microwave until hot.

Recipe Tips

  • Cut the potatoes into small, even pieces so they cook at the same time as the chicken.
  • Keep the ingredients in a single layer for better browning.
  • Swap broccoli for cauliflower, green beans, or zucchini.
  • Add cherry tomatoes during the last 10 minutes for extra flavor.
  • Use chicken thighs if you prefer more tender, juicy chicken.
  • Divide the finished meal into containers for easy meal prep.
