Description

This Easy High-Protein Chicken Bowl is a filling meal made with seasoned chicken, fresh greens, grains, vegetables, and a simple yogurt dressing. It’s easy to prepare, full of flavor, and great for lunch, dinner, or meal prep.

Ingredients

For the Chicken

  • 1 lb (450 g) boneless, skinless chicken breast
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Bowls

  • 2 cups cooked brown rice or quinoa
  • 4 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, chopped
  • 1/2 cup roasted red peppers, sliced
  • 1/2 cup shredded carrots
  • 1/4 cup pumpkin seeds
  • 1/4 cup crumbled feta cheese, optional

Simple Yogurt Dressing

  • 1/2 cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon honey
  • 1/2 teaspoon garlic powder
  • Salt and black pepper, to taste
  • 1–2 tablespoons water, as needed

Instructions

  • Season the chicken: Pat the chicken dry and season both sides with paprika, garlic powder, Italian seasoning, salt, and pepper.
  • Cook the chicken: Heat olive oil in a skillet over medium heat. Add the chicken and cook for about 5–7 minutes per side, or until fully cooked. Let it rest for a few minutes, then slice.
  • Prepare the dressing: Whisk the Greek yogurt, lemon juice, olive oil, honey, and garlic powder in a small bowl. Add water a little at a time until you reach your preferred consistency.
  • Prepare the vegetables: Wash and chop the greens, tomatoes, cucumber, roasted peppers, and carrots.
  • Build the bowls: Divide the cooked rice or quinoa between four bowls. Add the greens, sliced chicken, tomatoes, cucumber, peppers, and carrots.
  • Add toppings: Sprinkle with pumpkin seeds and feta if using.
  • Finish with dressing: Drizzle the yogurt dressing over each bowl and serve.

Notes

Storage

For meal prep, store the chicken, grains, and vegetables in airtight containers in the refrigerator for up to 4 days. Keep the dressing separate until ready to eat.
