Description

These Fudgy High-Protein Brownies are soft, chocolatey, and easy to make with simple ingredients. Greek yogurt keeps them moist, while protein powder adds extra protein to this delicious dessert or snack.

Ingredients

  • 1 cup plain Greek yogurt
  • 2 large eggs
  • 1/3 cup maple syrup or honey
  • 1/4 cup natural peanut butter
  • 1 teaspoon vanilla extract
  • 1 cup oat flour
  • 1/2 cup chocolate protein powder
  • 1/3 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup milk, as needed
  • 1/3 cup mini dark chocolate chips, optional

Instructions

  • Preheat the oven: Heat your oven to 350°F (175°C). Line an 8-inch square baking pan with parchment paper.
  • Mix the wet ingredients: Add Greek yogurt, eggs, maple syrup, peanut butter, and vanilla to a bowl. Whisk until smooth.
  • Add the dry ingredients: Stir in the oat flour, protein powder, cocoa powder, baking powder, and salt.
  • Adjust the batter: Add milk a little at a time if the batter feels too thick. It should be thick but easy to spread.
  • Add chocolate chips: Fold in the chocolate chips if using.
  • Fill the pan: Spread the batter evenly in the prepared pan.
  • Bake: Bake for 20–25 minutes. The center should look set but still slightly soft.
  • Cool: Let the brownies cool completely before slicing. This helps them become more fudgy.
  • Slice and serve: Cut into 12 squares and enjoy.

Notes

Storage

Store the brownies in an airtight container in the refrigerator for up to 5 days.

You can also freeze them for up to 3 months. Wrap individual brownies before freezing so they are easy to grab later.

Recipe Tips

  • Don’t overbake the brownies if you want a fudgy center.
  • Let them cool completely before cutting for cleaner slices.
  • Use chocolate protein powder for a richer chocolate flavor.
  • Add walnuts or chopped almonds for some crunch.
  • For extra chocolate flavor, add a few more chocolate chips on top before baking.
  • Serve with Greek yogurt, berries, or a little peanut butter for an easy dessert.
