Ingredients
- 8 large whole wheat or high-protein tortillas
- 8 large eggs
- 1/2 cup cottage cheese
- 1/2 lb (225 g) lean turkey sausage, cooked and crumbled
- 1 cup black beans, drained and rinsed
- 1 cup shredded cheddar cheese
- 1 cup diced bell pepper
- 1/2 cup diced onion
- 1 cup baby spinach
- 1 tablespoon olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Salsa, optional
Instructions
- Cook the vegetables: Heat olive oil in a large skillet over medium heat. Add the onion and bell pepper and cook for 3–4 minutes. Add the spinach and cook until wilted.
- Cook the eggs: Whisk the eggs, cottage cheese, garlic powder, paprika, salt, and pepper in a bowl. Pour into the skillet and cook gently, stirring until the eggs are just set.
- Add the turkey: Stir in the cooked turkey sausage and black beans. Cook for another 1–2 minutes.
- Fill the tortillas: Place one tortilla on a flat surface. Add some of the egg mixture to the center and sprinkle with cheese. Add salsa if desired.
- Fold the burritos: Fold the sides toward the center, then roll tightly from the bottom.
- Wrap for storage: Wrap each burrito in foil or parchment paper and place in the refrigerator or freezer.
- Reheat and serve: Microwave a refrigerated burrito for about 1–2 minutes. For frozen burritos, thaw overnight in the fridge or microwave using your appliance’s defrost setting before heating through.
Notes
Storage

For longer storage, wrap each burrito tightly and freeze for up to 3 months.

- Swap turkey sausage for cooked chicken, turkey bacon, or lean ground beef.
- Add mushrooms, tomatoes, or zucchini for more vegetables.
- Use your favorite salsa for extra flavor.
