Description

This Greek Yogurt Protein Bark is creamy, refreshing, and easy to make with just a few simple ingredients. Greek yogurt and protein powder create a protein-rich base, while berries and nuts add fresh flavor and crunch. Freeze it ahead of time for an easy snack or sweet treat.

Ingredients

  • 2 cups plain Greek yogurt
  • 1/2 cup vanilla protein powder
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup fresh strawberries, sliced
  • 1/2 cup fresh blueberries
  • 2 tablespoons chopped almonds
  • 2 tablespoons unsweetened coconut flakes
  • 2 tablespoons mini chocolate chips, optional

Instructions

  • Prepare the tray: Line a baking sheet or small tray with parchment paper.
  • Make the yogurt mixture: Add Greek yogurt, protein powder, honey or maple syrup, and vanilla to a bowl. Stir until smooth and creamy.
  • Spread the mixture: Pour the yogurt mixture onto the prepared tray. Spread it into an even layer about 1/4–1/2 inch thick.
  • Add toppings: Scatter the strawberries, blueberries, almonds, coconut, and chocolate chips evenly over the yogurt.
  • Freeze: Place the tray in the freezer for at least 3 hours, or until the bark is completely firm.
  • Break into pieces: Remove the bark from the freezer and let it sit for a few minutes. Break or cut it into pieces.
  • Serve: Enjoy immediately or return the pieces to the freezer for later.

Notes

Storage

Store the bark pieces in a freezer-safe container or zip-top bag for up to 1 month. Keep them frozen until ready to eat.

Recipe Tips

  • Use thick Greek yogurt for firmer bark.
  • Pat fresh berries dry before adding them so they don’t add extra moisture.
  • Don’t spread the yogurt too thin or the bark may become difficult to handle.
  • Try raspberries, blackberries, banana slices, or chopped peaches for different flavors.
  • Add peanut butter or almond butter in small swirls for extra flavor.
  • Let the bark sit at room temperature for 2–5 minutes before eating for a slightly softer texture.
