Description

This Easy High-Protein One-Pan Dinner combines chicken, potatoes, and vegetables in one pan for a simple and filling meal. It’s easy to prepare, full of flavor, and makes cleanup quick.

Ingredients

  • 1 lb (450 g) boneless, skinless chicken breast, cut into bite-size pieces
  • 1 lb (450 g) baby potatoes, halved
  • 1 cup broccoli florets
  • 1 cup bell pepper, chopped
  • 1/2 medium red onion, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese, optional
  • Fresh parsley, for serving, optional

Instructions

  • Preheat the oven: Heat your oven to 425°F (220°C). Line a large baking sheet with parchment paper.
  • Season the potatoes: Place the potatoes on the pan. Toss with half of the olive oil, paprika, garlic powder, salt, and pepper.
  • Start baking: Spread the potatoes in an even layer and bake for 15 minutes.
  • Add the chicken and vegetables: Add the chicken, broccoli, bell pepper, and red onion to the pan. Drizzle with the remaining olive oil and sprinkle with Italian seasoning and onion powder.
  • Bake again: Toss everything together and return the pan to the oven. Bake for another 15–18 minutes, or until the chicken is fully cooked and the potatoes are tender.
  • Add Parmesan: Sprinkle Parmesan over the top during the last 2 minutes of baking if desired.
  • Serve: Let the meal rest for a few minutes, then serve warm with fresh parsley.

Notes

Storage

Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the oven, air fryer, or microwave until hot.

Recipe Tips

  • Cut the potatoes into similar-sized pieces so they cook evenly.
  • Don’t overcrowd the pan or the vegetables may steam instead of roast.
  • Swap broccoli for zucchini, green beans, or cauliflower.
  • Add cherry tomatoes for extra color and flavor.
  • Use chicken thighs if you prefer darker, juicier meat.
  • Serve with a simple Greek yogurt sauce for extra creaminess and protein.
